Pie with pears


For the pie crust
  • 280 gm  flour
  • pinch of salt 
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 4 tbsp fine sugar
  • 150 gm cold butter, cubed
  • 1/4 cup cold kefir/yogurt
  • 4 tbsp milk/water
For the filling:
  • 9 pears thinly sliced
  • 70 gr brown sugar
  • juice of 1/2 lemon
  • 1 tsp cinnamon powder
  • 1/2 cup water,
  • 2 tbsp cornstarch
 Method:
  1. Put all ingredients except kefir and milk in a bowl, rub the butter into the flour until crumbs. 
  2. Add kefir and knead until the mixture forms a ball. Use a few drops of milk if the pie dough is dry. Knead the dough for few seconds. Cover the dough and chill in the frige for 30 minutes.
  3. In a pan, place all the ingredients for the filling ecxept water and corn starch and cook till softness.
  4. Mix the corn starch with two tbsp water and add this paste into the apple mixture. Cook until the liquids thicken.
  5. Bring out the pie dough from the refrigerator and roll out two-thirds and cover pie dish with it. Prick with a fork.
  6. Place the pie base in the preheated oven and cook until the it is golden in colour.
  7. Remove the pie dish from the oven and put pie filling in it.
  8. Roll out the remaining pastry and cover the pie. 
  9. Brush the top of the pie with milk, sprinkle some sugar and bake until the pie is golden brown.
