Esterházy


Esterházy was invented by Budapest confectioners in the late 19th century and soon became one of the most famous cakes in the Austro-Hungarian Monarchy.

INGREDIENTS

Biscuit
  • 250 grams of egg white
  • 125 grams of sugar
  • 1 tsp cinnamon
  • 220 grams of almond meal
  • 1 tsp baking powder
  • 3 tablespoons corn starch
  • a bit salt
Butter cream
  • 3 egg yolks
  • 250 grams of butter
  • 70 grams of cane sugar
  • 200 grams of milk
  • 1 vanilla stick
  • 20 grams of sugar
  • 20 grams of corn starch
Garnish
  • 75 grams of apricot jam
  • 125 grams of fondant
  • 50 grams of sliced almonds
  • 50 grams of pure chocolate 
Biscuit:
Beat the egg whites with a pinch of salt and the sugar until it is firm.
Mix the almond flour with 3 tablespoons of corn starch, baking powder and 1 teaspoon of cinnamon.
Combine all carefully.
Draw 5 circles 20 cm diameter each on 2 baking papers. Spread dough on baking paper equally with a spatula.
Bake the almond biscuits in preheated oven at +170 about 10-15 minutes.

Butter cream:
Beat the butter till it is white and soft.
Heat the milk with the sugar, the vanilla stick.
Mix 3 egg yolks, tablespoon corn starch, add a little warm milk and mix well.
Then pour the egg yolk mixture to the milk in the pan and stir well until it is thick and creamy.
Remove from the fire and allow to cool down.
When the cream has cooled down, remove the vanilla stick and add butter.

Compose:
Now put a layer of butter cream per biscuit layer that is about as thick as the biscuit. 
Use the two half biscuits (if so baked) in the middle of the cake.
The upper layer does not require butter cream.
Make sure there is enough butter cream left to cover the sides of the cake later. Put in the cooling.

Garnish:

Turn the cake in its entirety so that the straight side rises.
Spread the top layer with the apricot jam.
Spread the cream along the sides smoothly.
Heat the fondant.
Melt the chocolate.
Gently pour the white fondant over the top (apricot covered) layer, from the center.
Work fast: use a cornet with melted chocolate to apply stripes.
Apply sliced almonds beautifully on sides.
