Friese oranjekoeken
Ingredients:
Dough I
- 200 gr of flour
- 1 tbsp of corn starch
- 1 tsp baking powder
- 75 gr of cold butter
- 75 gr of sugar
- 1 tsp of anise seeds
- 1 tsp of ground anise seeds
- a bit of ground nutmeg
- 2 tbsp of orange jam
- 1 egg
- 2 tablespoons of water
- 150 gr of ground almonds
- 150 gr of sugar powder
- 1 egg
- 1 tsp of lemon zest
- 1 tbsp water
- 25 gr of pure chocolate
- 125 gr of fondant
- Mix flour, baking powder and corn starch.
- Add to this mix cubes of cold butter. Kneed till crumbs.
- Then add the spices and orange jam, sugar.
- Beat the egg with the water. Add to flour mixture and knead to a beautiful ball that comes loose from the bowl.
Almond paste:
- Mix the ingredients. Preferably a day in advance to make flavours stronger.
Making the orange cookies:
- Divide the dough into two equal parts.
- Gently spread half into the form and then spread the almond paste. Cover third layer with the rest dough.
- Put it in the preheated oven, cook in 180 degrees till golden brown around 20 minutes.
- Remove the cake from the oven. Turn it so that the tight bottom is placed on top.
- Divide the icing onto the cake and cut the edges neatly. Allow to cool completely.
- Divide the cake using the ruler in squares of 5 x 5 and if the rest is bigger or smaller also can be used.
- Decorate the cake with whipped cream and the chocolate. For whipped cream mix 125 ml cream with 1 tbsp sugar.
