spinach roll with salmon
INGREDIENTS (form 28*20 cm):
✅ 150 g of fresh spinach
✅ 3 eggs
✅ pinch of salt
✅ 50 g of flour
✅ 175 g of cream cheese
✅ 200 g of lightly salted salmon
- Pour boiling water over the spinach and drain all the water after 1 minute. Allow to cool, add egg yolks and beat with a blender until smooth. Add sifted flour and mix.
- Beat the egg whites with salt with a mixer until peaks and add to the dough in 3 stages (carefully mixing with a spatula from bottom to top).
- Pour onto a sheet of parchment paper and bake in an oven heated to 180 degrees for 10 minutes.
- After cooling, cover with a layer of cream cheese and a layer of salmon.
- Wrap it tightly in a roll, wrap it in cling film and put it in the fridge for a few hours or overnight.
