HONEY CAKE WITH Custard
For the dough:
-650g flour;
-200g sugar;
-3 tbsp honey;
-120 g butter;
-3 eggs;
-2 tsp soda;
-1 tsp baking powder;
Cream:
-1 liter of milk
-3 eggs
-4 tbsp flour
-200 g sugar
-200 g butter
vanilla
Preparation:
💗Pour sugar into a heat-resistant dish or pan, add butter and honey. Place in a water bath. Melt it.
💗Beat eggs until foamy.
💗Add eggs and stir constantly. Add soda, mix well.
💗Add baking powder to the flour and mix.
💗Pour the mass into the flour and knead the dough, it should not be tight, but also not stick to your hands. Place it in the refrigerator for 20 minutes.
💗We divide the dough into 8-9 parts. Roll out each one at once on parchment. Place in the oven for 5-6 minutes. Don’t overbake ❗️otherwise it will be hard
Prepare the cream:
- Combine milk and sugar in a non-stick pan, place on heat and bring to a boil, stirring until the sugar melts.
- Separately combine eggs, flour, a pinch of vanilla and a little (70-100 ml) milk from the total amount. Mix everything with a whisk so that the flour disperses throughout the mass, then connect the mixer. The mass should become homogeneous, without lumps of flour.
- While stirring the egg mass, gradually add boiling milk into it.
- Then return everything together to the heat and, over low heat, with constant stirring, bring the cream to thickness.
- Remove the thickened cream from the heat and add butter to it. It will immediately begin to melt. Mix it into the cream using a mixer. Cover the finished cream with a lid or cling film and cool completely.
- Grease the cakes with cream and gradually assemble the cake. Leave one cake layer for topping the finished cake.
- Cover the top and sides of the cake with cream as well. Place the cake in the refrigerator to soak. You can leave it overnight.
