Eclairs
Ingredients for 20 eclairs:
For the dough:
- 200g bio flour
- 100g bio butter
- 180g water
- pinch of salt, sugar
- 300g bio eggs (5 large)
Cream:
- Mix of whipped cream, sugar, cottage cheese, raspberries
Instructions
- Preheat the oven to +220.
- Take butter, salt, sugar, water and bring to boil.
- Add the sifted flour and mix well. Do not remove immediately from the fire, but stir right on the stove.
- Turn off the gas and add eggs one by one, mixing good.
- Place the dough in pastry bag with a tip diameter is 15mm. The length of the eclair is 15 cm.
- Bake at 190 for the first 10 minutes, and then another 25 minutes at 175C.
*I choose bio products as much as I can. Bio products are tastier, environment friendly and in this way I support small farms, small businesses that are strugling nowadays in competition with big "genetically modified'' companies which are not friendly to environment neither to human health.
