Eclairs

Ingredients for 20 eclairs:

For the dough:
  • 200g bio flour
  • 100g bio butter
  • 180g water
  • pinch of salt, sugar
  • 300g bio eggs (5 large)

Cream:
  • Mix of whipped cream, sugar, cottage cheese, raspberries 

Instructions
  1. Preheat the oven to +220.
  2. Take butter, salt, sugar, water and bring to boil.
  3. Add the sifted flour and mix well. Do not remove immediately from the fire, but stir right on the stove.
  4. Turn off the gas and add eggs one by one, mixing good.
  5. Place the dough in pastry bag with a tip diameter is 15mm. The length of the eclair is 15 cm.
  6. Bake at 190 for the first 10 minutes, and then another 25 minutes at 175C.



*I choose bio products as much as I can. Bio products are tastier, environment friendly and in this way I support small farms, small businesses that are strugling nowadays in competition with big "genetically modified'' companies which are not friendly to environment neither to human health.
