Cupcakes (by the book Nourish mind body and soul)


Ingredients for 12 cupcakes: 

  • 220 gr almond flour
  • 100 gr grated coconut
  • 1 large ripe banana
  • 1 tablespoon chia seeds previously soaked in 100 ml of water
  • 4 tablespoons of coconut oil
  • 125ml of coconut milk (or kefir or yogurt)
  • 10 dates  
  • 1/2 vanilla pod
  • pinch of salt
  • 1 teaspoon of soda for baking with apple viniger

Mix all ingredients.
Bake in the oven 15-20 minutes +200 C
I let the dough stay for a night that all tastes opened and this morning bakery was exquisite.
