Cupcakes (by the book Nourish mind body and soul)
Ingredients for 12 cupcakes:
- 220 gr almond flour
 - 100 gr grated coconut
 - 1 large ripe banana
 - 1 tablespoon chia seeds previously soaked in 100 ml of water
 - 4 tablespoons of coconut oil
 - 125ml of coconut milk (or kefir or yogurt)
 - 10 dates
 - 1/2 vanilla pod
 - pinch of salt
 - 1 teaspoon of soda for baking with apple viniger
 
Mix all ingredients.
Bake in the oven 15-20 minutes +200 C
I let the dough stay for a night that all tastes opened and this morning bakery was exquisite.
